Aloo Gobi is a South Asian dish popular in both India and Pakistan. Aloo means potato and Gobi means cauliflower. This dish has a prominent role in the movie Bend It Like Beckham. The DVD contains a featurette titled How to cook Aloo gobi.
Ingredients:
- large cauliflower - stripped of leaf, washed and broken into bite-sized florets
- large onions chopped into coarse chunks
- medium potatoes, peeled and chopped into bite-sized chunks
- 1 lemon
- 4-5 tsp of ghee or cooking oil
- 1 tsp cumin seeds
- 1 tsp salt
- 1 tsp turmeric
- 2 tsp ground coriander
- 1-2 tsp ground chilli
- 2-4 tsp garam masala
- 2 tsp chopped coriander leaves
Method:
- Heat the ghee/oil in frying pan.
- Add the chopped onion and 1 tsp of cumin seeds to the oil.
- Stir together and cook until onions become golden.
- Add the spices (except for garam masala) and the tomatoes.
- When the mixture turns oily, add the vegetables.
- Roast the cauliflower and the potatoes until they turn soft. Stir occasionally.
- Ensure that the potatoes and cauliflower are coated with the curry sauce.
- Add the garam masala and lemon juice and stir.
- Sprinkle chopped coriander leaves on top of the curry.
