Egg fried rice is almost a stereotype of the Chinese takeaway. Home made fried rice is surprisingly quick and easy to make, and can be a lot fresher and lighter than the resturant alternative.
- 1 cup Rice (basmati or any long grained rice)
- 2 Eggs, beaten
- 1 Onion
- 1 Green Chili
- 1 tsp Ginger n garlic paste
- Turmeric powder a pinch
- Chilli powder a pinch
- Garam masala a pinch
- 1/2 tsp Cummin Seeds
- Salt as per taste
- Coriander Leaves little
- Curry leaves 2 or 3
Method:
- First Cook the rice, do add salt for the rice while cooking the rice and keep it aside.
- Add oil to the pan and add jeera seeds and fry for few seconds.
- Add onions and green chilies and fry them together
- Add ginger and garlic paste
- Add turmeric, chilli powder, garam-masala and salt and mix well
- Add egg and keep stiring.
- Add the cooked rice add mix well.
- Cook until everything is mixed well.
- Garnish with the coriander leaves and curry leaves.
